I set out to make a Paleo Wendy’s Frosty, knowing the idea was too good to be true. The first go-round was a barely chocolate flavored, overpowering banana taste, runny mess. So, I decided to experiment and see if I could create the creamy, chocolate treat of my dreams. The result of my experiments turned out to be something unexpectedly decadent and delicious: Paleo Chocolate Mousse.
This Paleo Chocolate Mousse recipe begins with a very important step. Before you can mix anything, you need to chill a small can of coconut cream in the fridge. If you’re going Paleo, it’s smart to make a habit of keeping coconut cream in the refrigerator. It’s simplest to do this overnight, but a few hours should work. This will solidify your cream, so it can be whipped into a delicious treat! You can also turn a can of coconut milk upside down, refrigerate, and use the solidified cream, but I think that keeping coconut cream handy is simpler.
Once your cream is ready, simply drop your ingredients into a high powered blender and mix! If chocolate isn’t your scene, you can easily use the coconut cream and avocado as a base to add different flavors – mint, strawberry jam, almond extract, cinnamon, or 1/2 a banana for 1/2 of an avocado. I’ve added suggestions for Chocolate Mint Mousse, Banana Chocolate Mousse, Cinnamon Chocolate Mousse, and Berry Mousse to the recipe.
This mousse is best served immediately, possibly with a dollop of whipped coconut cream, a sprinkle of sea salt, a few chopped berries, cinnamon, or some chocolate shavings. You can really adapt the recipe to your own tastes and enjoy a rich, indulgent treat without the guilt!
