I need to get back to Menu Planning again and found a terrific resource that encourages readers to share their weekly meal plans at http://orgjunkie.com/. I’m hoping that regularly participating every Monday will keep me on track! I haven’t been feeling very well this weekend, so my motivation is low and my meal plan is not very ambitious this week:
Monday: Easy Chicken Pot Pie (going to try substituting canned turkey from food storage).
Tuesday: Toasted French dip with swiss and onions and Really Crisp Roasted Potatoes
Wednesday: Texas Pulled Pork (leftovers in freezer from last week) and salad.
Thursday: Homemade pizza with ranch sauce, chicken, artichokes, and red onion.
Friday: Date night. Kids eat at babysitters (see Babysitting Swap article).
Saturday: Crock Pot Ravioli (borrowed from The Organizing Junkie), bread, and green beans.
Sunday: Leftovers and Quesadillas with beans.
