Rochelle first gave me her taco soup recipe more than ten years ago when we were roommates.
Since that time, I’ve saved and printed this recipe multiple times, bringing it along with me when we moved homes or computers.
I’ve always appreciated the simplicity of this recipe. The main prep involves cooking meat and chopping onions. Otherwise, it’s a quick adding of ingredients to the pot and letting your slow cooker do the work. The recipe uses ingredients often found in your pantry and, once you make it a few times, you’ll find yourself purchasing beans when they’re on sale to stock your pantry for a taco soup day.
This is a very versatile and flexible recipe too. Don’t like one of the bean types I’ve added to my soup? Go ahead and switch them out. Prefer stewed tomatoes over diced? These small variations are really up to you. As Rochelle told me, “Every time I make this, I use different beans and tomatoes. Make sure you put

I’ve shared a white chicken version that I like, as well as a more savory ground pork version to show different variations. You can use beef, but I prefer the taste of pork for this recipe.

we have basically the same recipe–but it only requires cooking for 20 minutes on the stovetop (tastes better the longer you cook it of course)…

This looks so yummy! I would never have thought of using both of those seasoning packets together. I am using my crockpot almost 4 meals a week right now. Haha!
