First of all, thank you to everyone who sent me such kind messages about my Thanksgiving post! I woke up yesterday morning and my pie had set, we ate yummy cinnamon rolls for breakfast, and we had tons of time to prepare the remainder of our dishes (because the kids get up so early!). I decided to shake off the melancholy and simply enjoy the day with my family and friends.
Since we had so much time to prepare dishes, we were able to enjoy a leisurely day with our kids as well. Ella had a fantastic time helping daddy peel onions and mommy make sweet potatoes and ambrosia salad. She especially loved all of the taste testing! I loved the opportunity to talk and laugh as we all cooked together in the kitchen. Spending so much leisure time with my husband is such a treat! I didn’t catch any pics of us cooking, but here’s some from Ella and I taking a walk in the chilly November weather.
Ingredients
- 1 box pistachio pudding
- Milk
- 1 container extra creamy cool whip
- 2 cups miniature marshmallows
- 1 8 oz can of pineapple tidbits
- 1 15 oz can of mandarin oranges
- 1 10 oz bottle maraschino cherries
- optional: 1 cup coconut
Instructions
Mix pistachio pudding according to pudding directions in large bowl.
Stir in container of cool whip.
Add in 2 cups marshmallows.
Drop in pineapple tidbits and mandarin oranges, mixing as you go to distribute evenly.
Add maraschino cherries (maybe half of bottle), mixing as you go to distribute evenly.
Add coconut for an extra sweet treat (my husband prefers the dish without this addition).
Enjoy!

Wow, that salad looks so good….I started back on weight watchers today…wonder if I could figure the points for that … 😉
We always called it pistachio salad and it never makes it to the second day at our house.

Thanks for sharing the recipe, I’ve had ambrosia salad before but never tried making it. I can’t wait till Thanksgiving, it’ll be my little one’s first Thanksgiving.
