The discovery of basic white sauce has truly saved me many a weeks. White sauce is simple, inexpensive, and so adaptable to your family’s tastes. With a basic white sauce, some cheese, the pasta of your choice, a side of bread, and a green salad (or other veggie side), you have a quick, easy, and delicious dinner!
Basic White Sauce:
Ingredients
2 tablespoons butter
2 tablespoons flour
1 cup milk
Cheese of your choice – we like mozerella and parmesan
Seasonings of your choice – I add salt and pepper and my hubby likes to add red pepper flakes
Directions
Heat butter over medium heat in medium pan until melted.
Add flour to butter until it creates a paste
Slowly add milk, stirring it into flour mixture as you go. Add more or less milk, depending on desired thickness.
This is the basic recipe – what you do from here is all about experimentation and creating your own sauce!
I like to add about a 1/2 cup of mozerella and salt and pepper and put it over extra thin sphaghetti noodles or fettucini. You could absolutely use this as a base for a Mexican dish with a different style of cheese. You could make it rich, mild, or spicy – whatever cheese/spice combo you can dream up!
Once you add the cheese, reduce the temperature and heat until cheese is melted and sauce is creamy.

I confess we don’t do white sauce as much because it’s full of flour & butter and we try to watch that kind of stuff. We end up doing marinara mostly…but this sounds soooooo good! And you’re right–it’s so easy, and kid-friendly too.
