I dream of becoming one of those cooks. You know, the kind people always hope to receive a dinner invite from. The type of cook that instinctively uses just the right amount of spices and always gets food just right.One day, I hope to take a few cooking classes, to multiply my cookbook collection, and to stock my kitchen with all of the recommended utensils and gadgets found in “Cooks Illustrated.”
I’ve got a ways to go, but my dear hubby did help me get a bit closer in the gadgets department. I am now the proud owner of a cast iron skillet, set of ramekins, and the Orange Cookbook. Hooray! My Everyday Food subscription (which I’m not renewing to save money this year) is always teasing me with pictures of recipes made in cute little individual-serving ramekins. In case you’re wondering, like I did, what exactly a ramekin are, they’re adorable little oven/microwave safe bowls.
Ramekins are one of those things Tim doesn’t really get, but he humored me this year and bought a few (thanks, Annalise, for also sending a reminder his way). I decided to make one of our favorite Everyday Food recipes, Southern Mac and Cheese. Now, if you’re like me, you’re thinking store bought mac and cheese ‘ll do. But this egg-based recipe is something special. Trust me on this one.
And, just because it makes me happy to share my culinary successes, here’s a few glimpses of our latest mac and cheese dinner, made just right with ramekins:

I know what you mean! I have the white ceramic ramekins and I use them to make this chocolate chip cookies dessert that is too die for! I had it once at a restaurant. All it is, is cooking a big warm soft chocolate chip cookie in it and then putting vanilla ice cream on top, then whipped cream AND that’s it!
Your mac n cheese looks sooo good!
