My mom is visiting for Christmas this year and she brought along one of her treasured cookbooks from yesteryear, so she could delight us with fudge and Christmas treats. One of her first choices, the Nordy Bar Recipe, filled our home with the most delicious, rich butterscotch smell.
The recipe comes from one of those popular fundraiser cookbooks, where everyone contributes a recipe. Apparently, everyone loved to visit the Nordstrom’s cafe in the Seattle area when I was a kid and order delicious Nordy Bars. It only follows that clever home bakers decided to create their own version.
You aren’t really “into” butterscotch, you say? Just set aside that idea for now and prepare yourself for a bite of gooey goodness packed with marshmallows and chocolate. I dare you to take just one bite.

Ingredients
1/2 cup butter
1 (12 oz) package of butterscotch chips
1/2 cup of packed light brown sugar
2 eggs
1 1/2 cups of flour
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons vanilla
2 cups miniature marshmallows
1 cup chopped pecans (optional)
Directions
Preheat oven to 350 degrees.
Melt butter over medium heat in a medium saucepan. Add butterscotch chips and brown sugar, stirring until melted. Remove pan from heat and stir in eggs. Add flour, baking powder, and salt, mixing thoroughly. Set aside.
When the mixture is cool, stir in chocolate chips, marshmallows, and pecans (if desired). Spread into a 9 x 13 inch pan and bake at 350 for 25 minutes. Remove from oven, place on cooling rack, and let cool thoroughly before serving.
