I’m funny about bananas. I love them just this side of green. I don’t like banana flavored anything – not candy, pudding, pie, or bread. Today I learned that I like banana pancakes. These grain free pancakes from Homemade Mommy use banana for just the right touch of sweetness. If you add in unsweetend coconut and/or hemp hearts, you can enjoy them with a kick!
I am working on healing my body through food, with the help of my friend Maggie at Addicted to Nutrition. She sent me a sample menu this week and it included these pancakes. I admit to some skepticism – bananas and no grains? – but my whole family ended up eating these.
The first time I tried them, I followed the recipe exactly. I really appreciated how the only “new” ingredient we needed was almond butter. We liked them, but found them a bit bland for our taste. I added unsweetened shredded coconut to the top of mine and loved the results, as did baby.
This morning, I decided to try adding in the coconut and a bit of hemp hearts, along with some nutmeg. My nutritionist recommended trying the hemp hearts on top, so I decided to see how they would taste in the mix. The results were more filling and provided a bit of a delightful crunch.
Grain Free Pancakes (Adapted from Homemade Mommy)
Ingredients
- 2 eggs
- 1 very ripe banana
- 1/4 cup almond butter
- 2 Tbsp coconut milk
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch salt
- 1 tsp vanilla extract
- Coconut oil or ghee for cooking
- Optional:
- 1/2 cup unsweetened coconut
- 2 tsp hemp hearts
Instructions
Mash one ripe banana and the almond butter together in a bowl.
Add eggs and mix.
Add in the remainder of the ingredients and mix together until combined.
This batter will be relatively thin. I found that smaller pancakes puffed up higher, but they will not be as light and fluffy as traditional pancakes.
Heat your griddle and add coconut oil.Pour battle by 1/4 cups and cook on first side until bubbles appear on the service, 2 to 3 minutes. Flip and cook on second side.
If you decide not to put the coconut or hemp seeds into your batter, try them as a light topping. You can also add things like organic goat yogurt and dates or apricots.
