My family loves cornbread and you can usually tell by the trail of crumbs from the serving dish, to the plates, to the floor. Cornbread is yummy, but does it have to be so crumbly and could’t it cook a bit more evenly? I recently discovered the secret to evenly baked, delightfully fluffy, and deliciously moist cornbread: Cast Iron Skillet Cornbread.
The best part of this recipe? You can use 2 boxed mixes and the results will be just as good as from scratch! This is a go-to weeknight side dish at our house and it pairs especially well with chicken. Last night, my family had chicken drumsticks, ambrosia salad, and cast iron skillet cornbread. Yum!
Cast Iron Skillet Cornbread
Ingredients
- 2 Boxes of Cornbread Mix (Jiffy works well)
- 2 Eggs
- Milk
- Water
- 2 Tablespoons butter
- 1 to 2 Tablespoons Honey (Optional)
Instructions
Preheat oven to 400 degrees (or temperature indicated on your cornbread recipe)
Grease bottom and sides of a 10 or 12 inch cast iron skillet with butter
Place cast iron skillet in oven for 10 minutes to preheat
For a sweeter cornbread, add 1 to 2 tablespoons of honey
Spread cornbread mix into the skillet
Return skillet to oven and bake according to package directions

Oooh i love cornbread too!! I actually avoid making it all the time because I will eat the entire thing lol!!! I have never tried it in a cast iron skillet though!! Seems like Im missing out!!

I don’t use the Jiffy mix (we’re vegetarian and it contains animal lard), but I will definitely try my recipe in a cast iron skillet next time! And I bet a little honey would be a great addition – I sometimes drizzle a little honey on top of my piece ๐

My mom used to have a cast iron pan that was shaped like corn cobs that she would make cornbread in. It was the coolest pan I’d ever seen and the cornbread always came out amazing!
